Chicken Egg Salad Tortilla ....what a good breakfast to begin your day.


For most of life, nothing wonderful happens. If you don't enjoy getting up and working and finishing your work and sitting down to a meal with family or friends, then the chances are that you're not going to be very happy. If someone bases his happiness or unhappiness on major events like a great new job, huge amount of money, a flawlessly happy marriage or a trip to Paris, that person isn't going to be happy much of the time. If, on the other hand, happiness depends on a good breakfast, flowers in the yard, a drink or a nap, then we are more likely to live with quite a bit of happiness.


Hi peeps...it has been quite a while since I stopped blogging. Very much tied up with work and obligation.  

And finally...today, I have  some time  to type  my latest entry. But it seems that I have lost my touch...drained of ideas on how to begin. So I start my entry with a very sentimental thought by Andy Rooney....something to share with you, peeps or at least giving you a thought to ponder....


Last week was a  long weekend holiday. Prophet Muhammad s.a.w birthday followed by the celebration of Thaipusam by the Hindus. I was esctatic coz my children were coming home. It would be a great weekend to have everyone at home especially with my daughter, who will be staying here during her confinement. So the best way of appreciating this happiness is making a special recipe.


This recipe is actually a simple one. Suggested by my son when we went shopping the other day. He came across with this wraps and interested in trying a new recipe with it. So he did and it was quite delicious.


So when we went shopping again, we bought it and this time I wanna try my way and serve it as our breakfast...the Mexican way.




Chicken Egg Salad  Filling Tortillas


Ingredients
1 tbsp butter
2 large skinless chicken breast, chopped into cubes
2 large eggs
1 large onion, chopped
3 gloves garlic, chopped
1 tbsp paprika
1 tbsp oregano
1 tsp salt
salad


Direction
Heat butter in a heated pan and let it melt.
Add onion and garlic and fry  until they turn brown.
Put chicken breast cubes and saute until cook.
Break two large eggs into it and stir well.
Turn off the heat and add paprika, oregano and salt.


Put some salad on the tortillas and place 2 spoon full of the filling onto it and wrap. You can add slices of tomatoes and tomato sauce to give an extra taste.



Hmmmmm....wonderful. Chicken Egg Salad Tortillas...Mexican cruisine but served with Malaysian style.
