An Ice-Cream Chocolate Cake On A Hot Afternoon.



As salam and hello everyone. 

While waiting for my fresh cream to soften, I took the chance to post something on my blog. 

Isn't it a hot day, pips?  Well...everyone is suffering from the heat. Most afternoon is hot and humid. Everyone is seeking shelter. I'm sure you guys, escaped the heat with a tall glass of cold drinks in your hand. A gulp of it makes you feel as if you are at the oasis in the desert.

On a hot day like this, it would be very refreshing to treat ourselves with a piece of delicious ice-cream chocolate cake. And it would be full-filling if you could make it on your own.


The above picture was my second try. My first was dumped into the dustbin. Hahahahaaa....but I never easily give up. A friend of mine taught me his hubby's homemade ice-cream cake.  No doubts...it didn't look as good as Baskin Robbin's ice-cream cake but it still made me on top of the world.


And this one was ordered by a regular customer of mine. Practice makes perfect as the saying goes. Usually I asked their opinion on my cakes as their critics would made my cakes better than before.

So if any of you who feel like giving it a try, well why not? Ask for ice-cream cake and you can do it as easy as ABC. I'll share this video on making ice-cream cake to give you a better idea.



So why wait?  The best remedy for scorching hot weather is a tall glass of something ice cold and a dessert of ice-cream cake.

Irresistable Ferrero Roche Mini Chocolate Cake



A short school break  is jest around the corner. Hoorey! No school....No books. Huhuhuhu......for some, this short break doesn't mean  a thing because of extra classes especially to those involved in UPSR. No rest...not until the exam over. Pity our children. I felt a pang of guilt when my son said that parents took away their childhood. 

It's true in a way. Not like us. We truly enjoyed our long holidays. Bulan puasa pun holiday. We had our time to play 'tarik upih' and all sort of funs.


Well...this short break reminds me of my mini chocolate cake. Done it last December after our trip to Langkawi. Special request by my son who adores Ferrero Roche. I placed these chocolates on my mini cakes. It looks like a crown. Marvellous.


For the cake, I tried Mom's Chocolate Cake. Though most of us know how to bake a simple basic chocolate cake but sometimes it is an exciting experience to experiment other's recipes. It  will be pure bliss if the experiment turns out right. Wallah!


Mom's Chocolate Cake

Ingredients
2 cups white sugar
1/2 cup shortening or butter
2 eggs
3/4 cup unsweetened cocoa powder
1 cup milk
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1 cup hot,brewed coffee ( I used Nescafe )
2 teaspoons baking soda
2 1/2 teaspoons vanilla extract


Method
1. Preheat oven to 175 C. Grease and flour one 9 x 13 inch 
    baking pan. 


2. Put butter into your mixing bowl and beat until fluffy


3. Pour in the sugar about 1/3 cup at a time and beat
    until light and fluffy. ( This step is often referred to in
    cake recipes as 'creaming the sugar and shortening.'


4. Add eggs one at a time and mix well. Do not overbeat.


5. Stir in the dry ingredients (cocoa, flour, baking powder,
    baking soda) alternately with the wet ingredients (milk
    and vanilla extract) a little at a time, approximately 1/3
    cup each time.


6. Pour in the hot brewed Nescafe and mix well with a
    spatula.


7. Pour the batter in the prepared pan.


8. Bake in for 30 to 35 minutes or until a toothpick inserted
    into the cake comes out clean. Do not overbake so as to
    keep the cake moist and soft.



Once the cake is cooled, I cut it into small circular pieces and layered it with chocolate whipped cream. Topping with chocolate ganache and crowned it with a Ferrero Roche chocolate as the finishing touch. 

Chocolate Ganache

300gm semisweet or bittersweet chocolate, 
cut into small pieces

180ml heavy whipping cream

28 grams unsalted butter

Method
Heat the cream and butter in a saucepan over medium heat. Bring just to a boil. Turn off the heat and pour the chopped chocolate. Allow it to stand, without stirring for a few minutes. Then stir gently with a whisk until smooth. Once it is cooled, pour it onto the mini cakes.



Ferrero Roche Mini Chocolate Cake....simply irresistable.

Roses are red violets are blue, I never knew love until I found you!



She wanted her hubby's birthday cake to be special. Not only a cheese cake but also the deco. Her order was made a month ahead. I was busy with the sports events and it nearly slipped off my mind until she reminded me a few days before his birthday.

Roses are red violets are blue, there's only one way to say this, I love you. 

She wanted dark red roses on a heart shaped cheese cake. The last she ordered for him was my cheese cake too. So my cheese cake becomes his favourite eversince.

This time I tried a vanilla cake with cream cheese icing. It  tastes jest as good as a cheese cake.Thanks to Cooks.com for sharing this recipe.

HOMEMADE VANILLA CAKE 
WITH CREAM CHEESE ICING

Ingredients
2 sticks butter, softened
13/4 c. sugar
3 c. flour
2 tsp. baking powder
4 eggs(separate)
1 tsp vanilla
11/2c. milk

Beat yolks, sugar and butter. Add flour, milk, baking powder and vanilla. Beat egg whites slightly. Add shake of salt. Turn into other bowl. Mix. Pour in square aluminium pan. Flour and grease. Bake in a preheated 350F oven until done, 40 - 50 minutes.

CREAM CHEESE ICING
1 stick butter, softed
1 (8oz.) pkg. cream cheese, softened
1 (1lb) box (2c.) powdered sugar
1 tsp vanilla

Beat cheese and butter and gradually add powdered sugar. Add vanilla if desired.

Roses are red, Violets are blue. Love me so much, like I LOVE YOU!

She hid the cake in the car. About midnight she asked him to get something from the car and there...a heart shaped decorated with dark red roses waiting to wish him Happy Birthday. How romantic...

Chocolate Cheese Cuppies versi Black Bottom Kek.


Assalam...
Kebelakangan ni kurang rajin nak blogging. Idea kurang malahan takde langsung.  Letih lesu je badan ni. Rasa kurang sihat. Begitulah bila usia di ambang senja. Tidak macam orang muda. Badan segar bugar, bertenaga macam guna bateri energiser.

Tambahan malam tadi tidur jam empat pagi. Pulang dari Kuala Lumpur, menghantar anak yang berpantang. Sampai dah pukul 11.30 malam. Terus ke dapur. Menyiapkan beberapa order. 

Buat birthday cake untuk Baba (panggilan ayahnya) Tidak sempat snap gambar. Letih sangat. Buat cheese cupcakes dan order ulangan...Black Bottom Cupcakes. Resepi yang saya dapat dari Joy of Baking.com



Cubaan pertama saya buat menggunakan resepi dari Joy of Baking.com seperti dalam video yang saya attachkan ini. Tetapi cubaan ke dua, bahagian kek choklatnya, saya guna resepi kek choklat moist. Hasilnya seperti di bawah ini. So saya namakan versi saya ...... Chocolate Cheese Cuppies.

Chocolate Cheese Cuppies


BAHAN CHOKLAT KEK
250gm butter
6 biji telur
470gm gula caster
1/2tsp esen vanila


BAHAN KERING
225gm tepung gandum
65gm   tepung jagung
80gm   koko powder
11/4tsp bicarbonate of soda
secubit garam


BAHAN BASAH
200gm air biasa
2 tsp nescafe
3 tbsp chocolate emulco

Cara-Cara
Pukul butter dan gula hingga gebu.
Masukkan telur sebiji-sebiji, selang seli dengan bahan
kering dan bahan basah.


Tuangkan adunan choklat ke dalam cawan kertas. Kemudian ambil sesudu besar filling cream cheese dan tuang ke atas adunan choklat. Bakar selama 35 minit dengan suhu 160C


BAHAN CREAM CHEESE FILLING
225gm cream cheese (saya guna 350gm)
65gm gula halus ( saya guna 150gm)
1 biji telur (saya guna 2 biji)
1/2 sudu teh esen vanila


Cara membuat filling
Guna eletrik mixer, pukul cream cheese dan gula hingga sebati. Masukkan telur dan esen vanila. Pukul lagi sampai cream cheese creamy dan smooth. Sudukan ke dalam adunan choklat tadi.




Anak-anak saya sukakannya. Mengapa tidak anda? Hehehee....macam iklan TV pulak.

Black Bottom Cupcakes on Monday Blues


What a lazy Monday or some call it Monday blues. I've got this Monday feeling sometimes. Especially when I have a hectic weekend. But it doesn't last long anyway...so I do not need to be like them here.

So peeps...especially to working women, let's cheer up our Monday blues with some homemade cupcakes. Yunno...it's difficult to think anything but pleasant thoughts while eating your homemade cuppies.

Some friends want me to bake a combination of chocolate and cheese. And here what I've found.




Mine did not turn out  exactly like the ones in this video but it still turned out alright. Still taste fine and delicious. The bitter sweet and sour of chocolate and cream cheese is like harmony in my mouth.


I'm making these again this weekend. So let's see whether I can bake better than before. No harm trying again, right?

Bubur Nasi Buat Cucuku....Aliesya Sofea


Penyediaan makanan bayi dari air tangan ibu lebih berzat lagi berkhasiat dari makanan segera yang tersedia ada di pasaraya. 

Saya sungguh beruntung mendapat nasihat dan tunjukajar dari seorang jururawat desa ketika melahirkan anak bongsu saya dulu. Sebenarnya ibu-ibu sekarang lebih beruntung kerana dunia kehamilan dan penjagaan bayi lebih terbuka luas jika dibandingkan dengan zaman saya dulu.

Bila cucu saya pulang, si adik ni rupanya pemakan orangnya. Mummynya buatkan bubur. Petangnya saya buatkan bubur dari neneknya pula.



Bahan 1
Segenggam beras
Air secukupnya
1/3 karot

Direbus sehingga berasnya benar-benar kembang menjadi bubur dan karotnya empuk. Kemudian masukkan ke dalam blender dan kisar halus.

Bahan 2
3 ulas bawang merah (dimayang)
1 ulas bawang putih (dimayang)
1/2 mangkuk kecil ikan bilis (dibuang kepala dan perutnya)

Digoreng berasingan bawang merah dan bawang putih dengan ikan bilis. Kemudian diblend hingga hancur.

Hidangan
Masukkan sesenduk  bubur yang dikisar tadi ke dalam mangkuk baby dan masukkan setengah sudu makan bahan 2 yang sudah dikisar tadi. Tidak perlu masukkan garam kerana ikan bilis tadi sudahpun masin.

* Bahan 2 tadi boleh dibuat lebih dan disimpan di dalam 
  botol.




Menjadi nenek merupakan pengalaman yang indah dan bermakna bagi seorang perempuan. Panggilan nenek itu begitu merdu didengari dan bangga dengan panggilan itu. Tidak sabar menunggu detik dan ketika...ruang tamu rumah nenek ini dipenuhi dengan gelak ketawa para cucu.

Welcome to the Family...Muhammad Harith Faqeh bin Mohd Shahadan


My youngest boy entered my room when I was fast asleep. After three rounds of brisk walking this evening and my night tuition...my eyes were heavy; My body was exhausted as it had been working since morning. An early night and a good rest was all I needed.

There was a call from her sister and it was 12.45 p.m. Almost midnight.  My heartbeat began to accelerate. She was in the hospital and it was only 3cm. This morning she called me. Her water broke but she sounded as fit as a fiddle. Since this is her first baby, it would take  quite some times to see the world.

The sleepiness suddenly gone. I tried to sleep but couldn't. Kept on toss and turn. The thought of her going thru the pain without me was something I couldn't bear to imagine. Let me be with her even though we are miles away. Did my sholat hajat and kept on with my zikir, praying hard let Allah be with her. For all the nicest things she'd done when I was going thru the same thing with my youngest, I felt it was my turn to return her kindness. My precious 'doa' as her mother.

It was nearly 3.00 a.m. Waiting for the good news...at any time now. She was already 9cm. Please dear Allah....let the pain be bearable and the period of labour be shortened. Pleaseeee.....

At last...the good news came. A baby boy was delivered at 3.15 a.m. Alhamdulillah. Granny will be driving up to KL to meet you there tomorrow. See you dear boy...
